Tosèla cheese

"Tosela" is a fresh, non-cured cheese that is originally made in Primiero Valley.
It is a fresh cheese made with unpasteurised, whole or partially skimmed cows’ milk. Tosella is traditionally served sliced and fried as a side dish to Polenta (the typical Italian cornmeal porridge) and mushrooms. If you like, you can try "tosella" with "scorzone", a kind of mountain black truffle.

Mushrooms

Another typycal dish of Primiero Valley are the mushrooms: ceps (which can be tested in a salad mushrooms, or cooked), "del sangue" mushrooms (grilled mushrooms) and "tamburine clubs" (fried mushrooms). They can be used, also, in some delicious rice dishes.

Erbs

The cuisine of these valleys (from Primiero Pitch Rolle via Channels Valley) also offers several variations on the use of various herbs, roots and berries: they are used to make cakes, teas and drinks.

Cakes

The thick brushwood of Paneveggio Park is rich in soft fruits such as blueberries, strawberries and blackberries. You can try them together with the cream. Another typical dessert is the "ricotta" cheese softened by the dark and delicious mountain honey.
